Animal Free Papain Purified from Innovative Research is a two times crystalline suspension. This is a liquid in in 50mM sodium acetate, pH 4.5. For full activity, it is recommended that the enzyme be incubated in a solution containing 1.1mM EDTA, 0.067mM mercaptoethanol, 5.5mM cysteine-HCl for 30min and 0.22 micron filtered before use.
Papain is an enzyme that is activated by cleavage of the propetide by cysteine, sulfide, and sulfite. Papain breaks down meat fibers and is a common tenderizer in food preparations. In cell culture, papain can be used to disassociate cells in the first step (using a protease inhibitor solution to stop the action before complete lysis of the cells, followed by trituration to create single cell suspensions). It is also commonly used in enzymatic debriding preparations for chronic wound care.
